Job Description:
Hall and back-of-house work at Joun, a reservation-only Japanese restaurant in the Nagono area of Nagoya. The restaurant centres on a ten-seat counter in a quiet, refined space, with careful service tailored to each guest. For the first month you work mainly behind the scenes on washing up, clearing and drink making, so you are never put in front of customers straight away. Once you are settled you take on seating and assisting guests, taking orders, serving food and drinks, handling payments and light table cleaning. Most current staff started with no restaurant experience, and the head chef, who also conducts the interview, is known for looking after staff. Wages are paid in cash in hand (手渡し tewatashi), and working 10 or more days a month raises your rate by 10 percent from the 11th day. Shifts are 17:30 to 22:00 from 2 days a week, with weekday-only or weekend-only both possible and Sundays closed. Transport is fully covered, and nails and piercings are fine as long as they are not showy.
