Job Description:
This is a cooking support role at Oyaji Saigo no Nigiri, a traditional nigiri sushi restaurant in Kitashinchi, Kita-ku, Osaka, handling seasonal ingredients and fresh fish in a calm, craft-focused environment. The role is for applicants with prior kitchen experience from a ryotei, kappo, or sushi restaurant background — tasks include food prep and ingredient processing, cooking assistance, plating, dishwashing, and kitchen tidying. This is not a chain restaurant: each step of preparation is done with care, making it a good match for those who want to continue developing their craft rather than just execute repetitive tasks. Shifts run within the 17:00-23:00 window from 3 days a week and 4 hours minimum — dinner-only availability suits those who want to keep their daytime free or combine this with a day job. Salary is paid cash in hand (手渡し tewatashi). Staff meals (まかない makanai) are provided free of charge. Transportation allowance is partly covered. Hair colour, style, nails, and piercings are all permitted. High school students cannot apply for this position. This is a long-term role.
