Job Description:

This is a kitchen staff role at maru, a charcoal-grilled French restaurant (2nd floor) and wine bar (3rd floor) in Hatchobori, Chuo-ku, Tokyo, 1 minute walk from Hatchobori Station on the JR Keiyo Line. The kitchen is led by a chef who has won an award at the prestigious Bocuse d'Or France competition — a rare opportunity to learn high-level French technique in a working kitchen environment. Work covers food preparation (仕込み shikomi), cooking support, and dishwashing, with duties starting from simple prep tasks and gradually expanding as skills develop. Those with no restaurant kitchen experience but a love of cooking or food are especially welcome — home cooking ability is enough to get started. Holders of a Japanese cook's licence (調理師免許 chorishin-menkyo) start at 1,500 yen per hour; all others start at 1,400 yen with increases as skills grow. Shifts run 11:00-16:00 (prep and lunch preparation), with a minimum of 4 hours per day and 2 days per week; the store is closed Sundays and public holidays. Free staff meals (まかない makanai) are provided, plus a special employee discount on wines from the in-house bottle shop. Cash-in-hand payment (手渡し tewatashi) available. No resume required.

Wage:

1,400円 (per hour) Holders of a Japanese cook's licence (調理師免許): 1,500 yen/hr from day one. Salary increases as skills develop. Training period at same rate — no reduction.
