Job Description:
Work in the kitchen of a specialist crab restaurant in Susukino, Sapporo, with no customer service involved. Duties are washing dishes, clearing up, plating and preparing crab, and because the menu is almost entirely set courses you serve fixed dishes at fixed times. Everything is taught from scratch, so people who have never cooked before can start here. There is a clear progression: you begin at the sink for the first one to two months, move to simple cooking such as the rice porridge and udon courses after around three months, learn grilled crab using the oven and charcoal after six months, and take on full preparation of king crab and hair crab with a knife after a year. Around 60 percent of staff are students and 40 percent are homemakers, and exams and school placements are taken into account when shifts are set. Shifts are submitted every one to two weeks from 3 days a week, with start and finish times negotiable and no overtime. Hair colour and style are basically free, a uniform (制服 seifuku) is lent to you, and there is a trial period (試用期間 shiyoukikan) of 1 to 3 months at the same pay. The job involves handling crustaceans, so people with shellfish allergies cannot apply.
