Job Description:

This is a kitchen and dishwashing role at Minogasa Honten, a long-established standing soba restaurant in Iwamoto-cho, Chiyoda-ku, Tokyo — famous for using fresh-made Shinshu soba noodles, which is unusual for a standing-soba format. Tasks include boiling soba to order, adding dashi broth, plating toppings such as kakiage tempura (which vary by season), washing dishes, and food preparation and cleaning before opening and after closing. Water, dishes, and self-service trays are handled by customers, so direct customer interaction is minimal. Orders come in via meal ticket machines so there is no cashier operation and no verbal order-taking involved. The shift runs 11:00 to 15:00, Monday to Friday only (weekends and public holidays off), with a minimum of 3 hours per shift and 4 days per week. Staff meals are available at just 200 yen per day for all-you-can-eat soba menu items — even two meals in a day count as only 200 yen total (まかない makanai). Cash-in-hand payment (手渡し tewatashi) is available. A 3-month trial period applies at the same rate throughout. Hair colour, beard, and piercings are permitted. Shoes and T-shirt are provided; black trousers must be brought by the employee.
