Job Description:

This is a hall and kitchen staff role at Nagata Honjo-ken, a specialty boccake yakisoba (ぼっかけ焼きそば) restaurant inside Aeon Mall Himeji Otsu, operated by the Toridoll group which also runs Marugame Seimen. Boccake is a Kobe-Nagata soul food of simmered beef tendon and konjac (牛スジ肉とこんにゃくの煮込み gyusuji to konnyaku no nikomi) tossed in sweet-spicy sauce and cooked on an iron griddle in full view of customers — a high-energy, theatrical cooking experience. Work covers customer greeting and order taking, cooking assistance (noodle boiling, teppan cooking, toppings), cashier (touch-panel register), dishwashing using an industrial machine, and floor and kitchen cleaning. All menu items have recipes, and step-by-step training is provided — many staff here started with no food service experience at all. Staff meals (まかない makanai) cost just 120円 per meal, and the Toridoll group 25% discount applies at group restaurants for staff and their families. A family canteen (家族食堂 kazoku-shokudo) scheme provides up to 5,000円/month per child (for staff with children aged 15 and under).
