Hall staff (ホールスタッフ hooru-sutaffu) take orders, serve dishes to tables, process payment, clear tables (バッシング bassing), and assist with light cleaning; the restaurant sees increasing numbers of English-speaking tourists, making it a natural environment for those who want exposure to English on the job. Kitchen staff (キッチンスタッフ kicchin-sutaffu) handle food preparation (仕込み shikomi), ingredient cutting, plating, dishwashing, and general kitchen cleaning.
