Job Description:

This is a hall, kitchen, or dishwashing role at Goku (悟空), a celebrated Utsunomiya gyoza (宇都宮餃子 Utsunomiya-gyoza) specialist in Tochigi that has been featured on major TV programmes and popular YouTube channels; the compact restaurant seats around 19 guests and draws visitors from across Japan. Hall staff welcome and seat customers, take orders by hand-written slip (no touch-screen system), serve plates of freshly made gyoza to the table, process payment at the register (レジ reji), and reset tables between sittings. Kitchen staff cook gyoza to order, plate finished dishes, and keep the kitchen stocked and clean; dishwashing staff (洗い場 araiba) wash plates and glassware using a sponge and cloth and return them to their designated positions -- a task the restaurant compares directly to everyday home dishwashing. Shifts start at 12:00, 12:30, or 13:00 and run until 20:30, giving a full morning at home before work; the restaurant is closed every Friday (金曜定休日 kin-you-teikyu-bi).
