Job Description:
This is a hall and kitchen staff role at Yamaoka-ya Miyagino, a ramen restaurant known for its rich tonkotsu (pork bone) soup and 24-hour operation in Sendai, Miyagi. Hall duties include seating guests, taking orders via ticket machine (no cash register), serving ramen with a safety under-plate to prevent burns, and clearing tables. Kitchen duties include prepping toppings such as hand-cut spring onions and menma, plating ramen, and learning to make the signature slow-cooked chashu and house broth. A 30-hour structured training (研修 kenshuu) programme is provided with one-on-one support from a senior staff member. Three shift slots are available: lunch (11:00-15:00), evening (18:00-00:00), and overnight (00:00-07:00). A late-night allowance (深夜手当 shinya-teate) applies from 22:00 to 05:00, raising the rate to 1,750 yen per hour. High school students may work up to 22:00 only (Japanese labour law). Staff meals (まかない makanai) are available, including the restaurant's own ramen and fried rice. Hair colour and style are free.
